While it will offer the staple bakery items Mapleside Farms has been known for over the years, we’re also kicking it up a notch by partnering with master baker Bryan Ricco and renowned pastry chef Romel.
Bloom is more than just a bakery—it's a celebration of the art of baking, where traditional flavors meet innovative creations. From our signature apple cider donuts to exquisite pastries crafted with the finest ingredients, every bite at Bloom promises to be a journey of taste and tradition.

Bryan Ricco
Baker
Bryan, originally hailing from South Euclid, Ohio, has always found his calling in the culinary world, with a particular focus on kitchens. In 2010, he was granted a remarkable opportunity to work as a full-time baker alongside the esteemed master bakers at Distefano's Authentic. It was during this time that Bryan discovered his true passion for centuries-old baking techniques.Now, Bryan has taken on a leadership role at Bloom Bakery, located at Mapleside Farms. He is committed to providing the community with nutritional artisan bread, sourcing the highest quality organic whole grain heritage flours. These organic flours are stone-milled, a process that preserves the nutrition of the whole kernel, leaving behind essential proteins, oils, vitamins, and minerals that are typically stripped in today's commercial flours.The result is Bloom Bakery breads, which are known for their soft interior and chewy, amazing crusts.
Romel
Pastry Chef
With over 20 years of experience in the pastry industry, Romel is a renowned master of cake artistry, known for crafting spectacular cake masterpieces. His impressive career includes eight years in Los Angeles, where he catered to high-profile clients such as Fergie, Bella Porch, the Hiltons, Kardashians, Jenners, Wahlbergs, Spellman, Stevie Wonder, Usher, Chrissy Teigen & John Legend, Sofia Vergara, Lady Gaga, and Rihanna.
Romel’s talents extend beyond traditional baking. A finalist on Netflix's "Sugar Rush" and a competitor on Food Network, he seamlessly blends his skills in painting, clay sculpting, and tattooing to create visually stunning and intricately detailed desserts. Romel’s passion lies not only in creating exquisite confections but also in sharing his culinary creations with family, friends, and his community.
